• Ingredients
    1 pound firm tofu, mashed
    1/4 cup soy milk or water
    1/4 cup nutritional yeast
    1/4 teaspoon salt
    1/2 teaspoon oregano and/or basil and/or fresh or dried parsley (according to your tastes)
    1/4 teaspoon turmeric (optional, for color)
    1 teaspoon olive oil
    Black pepper or cayenne for taste

  • Directions
    1. Heat the oil in a large non-stick frying pan or wok over medium heat.
    2. Mix all other ingredients in a large bowl until they are a big, sticky mess.
    3. Pour the mixture into the pan and cook, stirring frequently, for about three minutes.
    4. Serve over toast. Makes two to four servings. If you have the time and inclination, you can cook mushrooms, peppers, tomatoes, and/or onions in the oil for five minutes or so before you add the tofu mixture.
